- 1 1/2 lb. fingerling potatoes
- 2 Tbsp. oil
- 1/2 tsp. salt
- 1/2 tsp. cilantro
- 1/4 tsp. pepper
- 1/8 tsp. cumin
- Wash and dry potatoes. Cut large potatoes into 1/4ths, medium potatoes in 1/2, and leave small potatoes whole.
- Coat potatoes evenly with remaining ingredients. Bake at 400° F for 35 minutes.
