
Apple cider braised beef

A hearty and flavorful way to cook a chuck roast.
Ingredients
- 2 cups butternut squash
Beef
- 2 1/2 lbs. beef chuck roast
- Salt
- Pepper
Onions
- 1 tsp. oil
- 2 onions, sliced
- 2 cloves of garlic, minced
- 1/3 cup apple cider
Braising liquid
- 1/3 cup apple cider
- 2 Tbsp. water
- 2 Tbsp. + 1 Tbsp. apple cider vinegar
- 3/4 tsp. salt
- 1 tsp. thyme
- 1/2 tsp. rosemary
- 1/2 tsp. garlic powder
Instructions
Sear beef
- Cut beef roast into 2-3” pieces. Sprinkle with salt and pepper.
- Heat a skillet over medium-high (6). Brown beef pieces on all sides then set aside.
Sauté onions
- Add onion and oil to skillet. Sauté for ~5 minutes until soft. Add in garlic and stir for another minute.
- Pour in apple cider and continue to cook until caramelized, ~10 minutes, stirring often.
Braise beef
- Remove onions from skillet and distribute in a 9”x13” baking dish. Add beef pieces evenly on top.
- Combine braising liquid ingredients in a bowl, reserving 1 Tbsp. of apple cider vinegar. Pour over everything and stir to combine.
- Cover baking dish with aluminum foil and bake at 300°F for 2-2 1/2 hours.
- Remove baking dish from oven and remove foil. Add squash pieces and remaining 1 Tbsp. of apple cider vinegar. Submerge squash pieces in liquid as much as possible. Adjust seasonings to taste.
- Return baking dish to the oven, uncovered, for another 30 minutes, or until squash pieces are tender but not falling apart.
