Steamed pumpkin muffins

A moist, sticky muffin that makes the perfect snack.
Ingredients
Wet ingredients
- 3/4 cup canned pumpkin
- 1/2 cup canned coconut milk
- 1/3 brown sugar
- 1 Tbsp. oil
- 1/2 tsp. vanilla
Dry ingredients
- 1/2 cup rice flour
- 1/4 cup gf flour
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. salt
Instructions
- Combine wet and dry ingredients separately, then fold together.
- Allow batter to rest while bringing a pot of water to boil.
- Pour batter into 8 silicone muffin tins placed in a steamer pot.
- Steam over medium-low (3) heat for 20 minutes until tops are cracked and centers are firm.
Notes
Substitute 2 mashed medium bananas for a banana bread flavor.
