Steamed pumpkin muffins

A moist, sticky muffin that makes the perfect snack.

Ingredients

Wet ingredients

  • 3/4 cup canned pumpkin
  • 1/2 cup canned coconut milk
  • 1/3 brown sugar
  • 1 Tbsp. oil
  • 1/2 tsp. vanilla

Dry ingredients

  • 1/2 cup rice flour
  • 1/4 cup gf flour
  • 1 tsp. baking powder
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. salt

Instructions

  1. Combine wet and dry ingredients separately, then fold together.
  2. Allow batter to rest while bringing a pot of water to boil.
  3. Pour batter into 8 silicone muffin tins placed in a steamer pot.
  4. Steam over medium-low (3) heat for 20 minutes until tops are cracked and centers are firm.

Notes

Substitute 2 mashed medium bananas for a banana bread flavor.
