Ripe plantain porridge (coconut)

A sweet porridge perfect for breakfast.

Ingredients

  • 1 large overripe plantain
  • 1 1/2 cups water
  • 1/2 cup coconut milk
  • 1 Tbsp. millet flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • Pinch of allspice
  • Pinch of salt

Instructions

  1. Blend plantain with water and coconut milk until smooth.
  2. Pour mixture into a saucepan over medium heat.
  3. Stir in cinnamon, nutmeg, salt, and vanilla extract.
  4. In a small bowl, mix tapioca starch with 2 Tbsp. water to form a slurry.
  5. Once the plantain mixture is warm, stir in the slurry while whisking constantly.
  6. Simmer on medium-low heat for 10–15 minutes, stirring frequently, until thick and creamy.
  7. Taste and adjust sweetness if needed.
  8. Add a splash of water or milk if it becomes too thick.
