A sweet porridge perfect for breakfast.
Ingredients
- 1 large overripe plantain
- 1 1/2 cups water
- 1/2 cup coconut milk
- 1 Tbsp. millet flour
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- Pinch of allspice
- Pinch of salt
Instructions
- Blend plantain with water and coconut milk until smooth.
- Pour mixture into a saucepan over medium heat.
- Stir in cinnamon, nutmeg, salt, and vanilla extract.
- In a small bowl, mix tapioca starch with 2 Tbsp. water to form a slurry.
- Once the plantain mixture is warm, stir in the slurry while whisking constantly.
- Simmer on medium-low heat for 10–15 minutes, stirring frequently, until thick and creamy.
- Taste and adjust sweetness if needed.
- Add a splash of water or milk if it becomes too thick.
