Sorghum “corn”bread

A corn-free side dish that is a pretty close substitute to the original.

Ingredients

  • 1/2 cup finely ground sorghum
  • 1/2 cup gf flour
  • 1 Tbsp. sugar
  • 1/2 Tbsp. baking powder
  • 1/4 tsp. salt
  • Wet ingredients
  • 1/2 cup water
  • 2 Tbsp. oil
  • 1/2 Tbsp. flax meal + 1 1/2 Tbsp. water

Instructions

  1. Heat water in a skillet until boiling. Add sorghum and allow to soak for 5-10 minutes. 
  2. Mix flax meal and water and allow to gel for 5 minutes.
  3. Mix wet and dry ingredients separately, then stir wet ingredients into dry ingredients just until combined.
  4. Pour batter into a parchment lined 8x4 inch baking dish.
  5. Bake at 350°F for 16-18 minutes until center is firm.
  6. Cool slightly before cutting and serving.
