
Sorghum “corn”bread

A corn-free side dish that is a pretty close substitute to the original.
Ingredients
- 1/2 cup finely ground sorghum
- 1/2 cup gf flour
- 1 Tbsp. sugar
- 1/2 Tbsp. baking powder
- 1/4 tsp. salt
- Wet ingredients
- 1/2 cup water
- 2 Tbsp. oil
- 1/2 Tbsp. flax meal + 1 1/2 Tbsp. water
Instructions
- Heat water in a skillet until boiling. Add sorghum and allow to soak for 5-10 minutes.
- Mix flax meal and water and allow to gel for 5 minutes.
- Mix wet and dry ingredients separately, then stir wet ingredients into dry ingredients just until combined.
- Pour batter into a parchment lined 8x4 inch baking dish.
- Bake at 350°F for 16-18 minutes until center is firm.
- Cool slightly before cutting and serving.
