A rich chicken dish full of flavor.

Ingredients

  • 3 chicken breasts
  • 2 Tbsp. oil
  • 1/4 cup gf flour
  • 1 1/2 cups chicken broth
  • 1/4 onion

Seasonings

  • 3/4 tsp. salt
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. onion powder
  • 1/4 tsp. pepper

Instructions

  1. Cut chicken breasts in half horizontally. Liberally season both sides with salt and pepper.
  2. Mix seasonings and flour and set aside.
  3. Heat cast iron skillet to medium (5-6). Coat chicken pieces in flour mixture on all sides.
  4. Add oil to skillet and brown chicken on both sides. Remove and set aside.
  5. Cut onion into 1/4” strips. Add to the skillet and reduce heat to medium-low (3). Continuously stir the onion around until translucent.
  6. Dissolve remaining flour in 1/2 cup of chicken broth, then stir in remaining broth. Add to skillet and whisk continuously. Allow to come to a simmer.
  7. Add chicken back to skillet. Cover and simmer until chicken is fully cooked through, ~10 minutes.
