A great foundation for at-home gyros.

Ingredients

Meat

  • 1 lb. ground beef
  • 12 oz. ground lamb
  • 1/2 onion, grated
  • 1 tsp. olive oil
  • 1 1/4 tsp. salt
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1/2 tsp. coriander
  • 1/2 tsp. black pepper
  • 1/2 tsp. liquid smoke

To serve

  • Pita bread or rice
  • Cucumber
  • Tomato
  • Yogurt sauce or hummus

Notes

  1. In a bowl, mix meat ingredients until fully combined.
  2. Place a piece of parchment paper on a flat surface. Add 1/4 of the meat, then place another sheet of parchment paper on top.
  3. Using a rolling pin, roll meat a thin rectangle ~1/4 inch thick.
  4. Fold into 1” folds with the parchment in between and place on a baking sheet.
  5. Repeat with remaining meat, placing on the same baking sheet.
  6. Bake at 400°F for 20 minutes until fully cooked through.
  7. Remove from oven and let rest 5 minutes.
  8. Carefully unwrap the parchment then slice along folds of the meat. Throw away parchment paper and drain baking sheet, if needed. 
  9. Lay meat on a single layer on the baking sheet and broil on high for 4 minutes.
