Caribbean pot roast

A spiced pot roast full of Caribbean flavor.

Ingredients

  • 2 1/2-3 lbs. chuck roast
  • 3/4 cup tomato sauce
  • 1/4 cup orange juice
  • 1 Tbsp. brown sugar
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp. cocoa powder
  • 1/4 tsp. cinnamon

Instructions

  1. Season roast liberally with salt and pepper. Brown on both sides and place in crock pot. 
  2. Mix remaining ingredients. Pour sauce over pot roast and stir to cover on all sides.
  3. Cook on high for 4 hours.

French onion beef roast

A uniquely flavorful pot roast perfect for any occasion.

Ingredients

  • 2 1/2-3 lbs. chuck roast
  • 1 1/2 cups beef broth
  • 1/4 cup dry white wine
  • 1 Tbsp. tomato paste
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. thyme
  • 1 bay leaf
  • Salt and pepper

Onions

  • 1 large yellow onion
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. brown sugar

Instructions

  1. Pat the roast dry and season all sides generously with salt and black pepper.
  2. Heat oil in a cast iron skillet over medium-high (6) heat.
  3. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove roast and set aside.
  4. Add onions to the pot and reduce heat to medium (5).
  5. Cook onions for 10 minutes, stirring often.
  6. Add the balsamic vinegar, brown sugar, and a splash of water. Cook for another 2-3 minutes. Set aside.
  7. Add remaining ingredients to crockpot.
  8. Add the roast on top, nestling it into the onions and liquid.
  9. Cook on high for 4 hours.
