A spiced pot roast full of Caribbean flavor.
Ingredients
- 2 1/2-3 lbs. chuck roast
- 3/4 cup tomato sauce
- 1/4 cup orange juice
- 1 Tbsp. brown sugar
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 tsp. oregano
- 1/2 tsp. cocoa powder
- 1/4 tsp. cinnamon
Instructions
- Season roast liberally with salt and pepper. Brown on both sides and place in crock pot.
- Mix remaining ingredients. Pour sauce over pot roast and stir to cover on all sides.
- Cook on high for 4 hours.

A uniquely flavorful pot roast perfect for any occasion.
Ingredients
- 2 1/2-3 lbs. chuck roast
- 1 1/2 cups beef broth
- 1/4 cup dry white wine
- 1 Tbsp. tomato paste
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. thyme
- 1 bay leaf
- Salt and pepper
Onions
- 1 large yellow onion
- 1 Tbsp. balsamic vinegar
- 1 tsp. brown sugar
Instructions
- Pat the roast dry and season all sides generously with salt and black pepper.
- Heat oil in a cast iron skillet over medium-high (6) heat.
- Sear the roast on all sides until browned, about 4-5 minutes per side. Remove roast and set aside.
- Add onions to the pot and reduce heat to medium (5).
- Cook onions for 10 minutes, stirring often.
- Add the balsamic vinegar, brown sugar, and a splash of water. Cook for another 2-3 minutes. Set aside.
- Add remaining ingredients to crockpot.
- Add the roast on top, nestling it into the onions and liquid.
- Cook on high for 4 hours.
