
Mexican rice - tomato sauce

A classic side dish for any Mexican meal.
Ingredients
- 1/4 cup oil
- 2 cups rice
- 2 1/2 tsp. chili powder
- 2 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. Mexican oregano
- 1/2 tsp. salt
- 1-14 oz. can tomato sauce
- 1 1/2 cups water
- 1 tomato, seeded and diced
Instructions
- Heat oil in a pot over medium (5) heat. Add rice to fry, stirring often for 3-4 minutes.
- Add spices and continue to fry for another minute.
- Add tomato sauce, water, and tomato. Pour into a glass baking dish, cover with tin foil, and bake at 375°F for 50 minutes.
Notes
Stovetop option: make in a saucepan. Cook rice over low (2) heat for 20-25 minutes until done. Uncover and fluff with a fork.

Ingredients
- 1 Tbsp. oil
- 1 1/2 cups rice
- 2 1/4 cup broth
- 1 1/2 Tbsp. tomato paste
- 1/4 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. Mexican oregano
- 1/4 tsp. salt
Instructions
- Fry rice in oil until golden.
- Add in remaining ingredients and bring to a boil. Lower heat to low (2).
- Cook for 15 minutes and remove from heat. Fluff rice with a fork then allow to sit for another 5 minutes.
