Mexican rice

Mexican rice - tomato sauce

A classic side dish for any Mexican meal.

Ingredients

  • 1/4 cup oil
  • 2 cups rice
  • 2 1/2 tsp. chili powder
  • 2 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. Mexican oregano
  • 1/2 tsp. salt
  • 1-14 oz. can tomato sauce
  • 1 1/2 cups water
  • 1 tomato, seeded and diced

Instructions

  1. Heat oil in a pot over medium (5) heat. Add rice to fry, stirring often for 3-4 minutes.
  2. Add spices and continue to fry for another minute.
  3. Add tomato sauce, water, and tomato. Pour into a glass baking dish, cover with tin foil, and bake at 375°F for 50 minutes.

Notes

Stovetop option: make in a saucepan. Cook rice over low (2) heat for 20-25 minutes until done. Uncover and fluff with a fork.

Cook Time: 15 minutes
Total Time: 19 minutes

A great side dish for Mexican food.

Ingredients

  • 1 Tbsp. oil
  • 1 1/2 cups rice
  • 2 1/4 cup broth
  • 1 1/2 Tbsp. tomato paste
  • 1/4 tsp. cumin
  • 1/4 tsp. garlic powder
  • 1/4 tsp. Mexican oregano
  • 1/4 tsp. salt

Instructions

  1. Fry rice in oil until golden. 
  2. Add in remaining ingredients and bring to a boil. Lower heat to low (2).
  3. Cook for 15 minutes and remove from heat. Fluff rice with a fork then allow to sit for another 5 minutes.
