Rice and peas (coconut) - Instant pot

A great side for Caribbean dishes.

Ingredients

  • 2 cups rice
  • 1 cup bean cooking water (or more water)
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 1 1/2 cup cooked red beans
  • 1/4 tsp. salt
  • 1/4 tsp. thyme
  • 1/4 tsp. pepper
  • 1/4 tsp. allspice

Instructions

  1. Cook beans and reserve cooking water. Set aside.
  2. Add all ingredients to instant pot. 
  3. Cook on rice function.

Beans in instant pot

  1. Soak 1 cup of small red beans for 8 hours or quick soak. Rinse and drain.
  2. Add to instant pot with 3 cups of water and 1 tsp. salt. Pressure cook for 8 minutes.

  • 1 1/2 cups rice
  • 1 1/2 cups chicken broth
  • 1/2 cup bean cooking water (or more chicken broth)
  • 1/4 cup coconut milk
  • 1 1/2 cup cooked red beans
  • 3/4 tsp. salt
  • 1/4 tsp. thyme
  • 1/4 tsp. pepper
  • 1/4 tsp. allspice

Instructions

  1. Cook beans and reserve cooking water. Set aside.
  2. Add everything to a pot besides rice. Bring to a boil.
  3. Stir in rice. Reduce heat to low (2) and cover.
  4. Cook for 15 minutes, then remove from heat. Fluff rice, return lid, then allow to steam for another 5 minutes.
