A great side for Caribbean dishes.
Ingredients
- 2 cups rice
- 1 cup bean cooking water (or more water)
- 1/2 cup water
- 1/2 cup coconut milk
- 1 1/2 cup cooked red beans
- 1/4 tsp. salt
- 1/4 tsp. thyme
- 1/4 tsp. pepper
- 1/4 tsp. allspice
Instructions
- Cook beans and reserve cooking water. Set aside.
- Add all ingredients to instant pot.
- Cook on rice function.
Beans in instant pot
- Soak 1 cup of small red beans for 8 hours or quick soak. Rinse and drain.
- Add to instant pot with 3 cups of water and 1 tsp. salt. Pressure cook for 8 minutes.

- 1 1/2 cups chicken broth
- 1/2 cup bean cooking water (or more chicken broth)
- 1/4 cup coconut milk
- 1 1/2 cup cooked red beans
- 3/4 tsp. salt
- 1/4 tsp. thyme
- 1/4 tsp. pepper
- 1/4 tsp. allspice
Instructions
- Cook beans and reserve cooking water. Set aside.
- Add everything to a pot besides rice. Bring to a boil.
- Stir in rice. Reduce heat to low (2) and cover.
- Cook for 15 minutes, then remove from heat. Fluff rice, return lid, then allow to steam for another 5 minutes.
