Whipped shortbread

A delightful small cookie.

Ingredients

  • 1/4 cup vegetable shortening
  • 3 Tbsp. powdered sugar
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. almond extract (optional)
  • Pinch of salt
  • 1/4 cup + 2 Tbsp. gf flour

Instructions

  1. Mix shortening until smooth. Beat with a whisk for 1-2 minutes until lighter in color. 
  2. Add powdered sugar and tapioca starch and whisk for another 1-2 minutes.
  3. Add vanilla, almond extract, and salt and mix until combined.
  4. Add flour and stir until just combined.
  5. Cover dough and chill for 15 minutes.
  6. Scoop 2 teaspoon portions onto a parchment-lined baking sheet. Flatten with a single press of a fork.
  7. Bake at 300°F for 14-16 minutes until the cookies are set but still pale on top.
  8. Cool on the baking sheet for 5 minutes, then transfer carefully to a rack to cool completely.
