
Whipped shortbread

A delightful small cookie.
Ingredients
- 1/4 cup vegetable shortening
- 3 Tbsp. powdered sugar
- 1/4 tsp. vanilla extract
- 1/4 tsp. almond extract (optional)
- Pinch of salt
- 1/4 cup + 2 Tbsp. gf flour
Instructions
- Mix shortening until smooth. Beat with a whisk for 1-2 minutes until lighter in color.
- Add powdered sugar and tapioca starch and whisk for another 1-2 minutes.
- Add vanilla, almond extract, and salt and mix until combined.
- Add flour and stir until just combined.
- Cover dough and chill for 15 minutes.
- Scoop 2 teaspoon portions onto a parchment-lined baking sheet. Flatten with a single press of a fork.
- Bake at 300°F for 14-16 minutes until the cookies are set but still pale on top.
- Cool on the baking sheet for 5 minutes, then transfer carefully to a rack to cool completely.
