Ingredients
- 1/4 cup + 2 Tbsp. gf flour
- 1/8 tsp. cream of tartar
- 1/16 tsp. salt
- Wet ingredients
- 2 Tbsp. white sugar
- 1 1/2 Tbsp. shortening
- 1 Tbsp. unsweetened applesauce
- 1/4 tsp. vanilla
- Rolling
- 1 Tbsp. sugar
- 1/4 tsp. cinnamon
Notes
- Line a baking sheet with parchment paper.
- Whisk the dry ingredients.
- In a separate bowl, cream the sugar and shortening.
- Mix in the applesauce and vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Mix the sugar and cinnamon together in a small bowl.
- Roll dough into 1 1/2-inch balls.
- Roll each ball in the cinnamon sugar mixture.
- Place the dough balls on the prepared baking sheet.
- Bake at 350°F for 10 minutes until the edges are set and the centers are soft. Press flat wnd return to oven for 1-2 minutes until centers are firm.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
