Snickerdoodles

A unique, tangy cookie.

Ingredients

  • 1/4 cup + 2 Tbsp. gf flour
  • 1/8 tsp. cream of tartar
  • 1/16 tsp. salt
  • Wet ingredients
  • 2 Tbsp. white sugar
  • 1 1/2 Tbsp. shortening
  • 1 Tbsp. unsweetened applesauce
  • 1/4 tsp. vanilla
  • Rolling
  • 1 Tbsp. sugar
  • 1/4 tsp. cinnamon

Notes

  1. Line a baking sheet with parchment paper.
  2. Whisk the dry ingredients.
  3. In a separate bowl, cream the sugar and shortening.
  4. Mix in the applesauce and vanilla extract.
  5. Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Mix the sugar and cinnamon together in a small bowl.
  7. Roll dough into 1 1/2-inch balls.
  8. Roll each ball in the cinnamon sugar mixture.
  9. Place the dough balls on the prepared baking sheet. 
  10. Bake at 350°F for 10 minutes until the edges are set and the centers are soft. Press flat wnd return to oven for 1-2 minutes until centers are firm.
  11. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
