Ingredients
- 1 Tbsp. + 1 tsp. oil
- 1 1/2 Tbsp. vegetable shortening
- 3 1/2 Tbsp. brown sugar
- 1/2 tsp. vanilla
- 1/2 Tbsp. ground flaxseed + 2 Tbsp. water
- 1/4 cup + 2 Tbsp. gf flour
- 1/16 tsp. baking soda
- Pinch of salt
- 3 Tbsp. chocolate chips
Notes
- Mix ground flaxseed with water and let sit 5 minutes until gelled.
- In a small bowl, mix oil, shortening, and brown sugar until smooth and slightly fluffy.
- Stir in vanilla extract and flax egg until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually stir the wet ingredients into the dry ingredients until combined.
- Fold in chocolate chips.
- Place dough on a lined baking sheet. Leave some space for spreading.
- Bake at 350°F for 7-8 minutes, or until centers are soft but no longer shiny.
- Let cookies rest on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
