Chocolate chip cookies

A staple cookie.

Ingredients

  • 1 Tbsp. + 1 tsp. oil
  • 1 1/2 Tbsp. vegetable shortening
  • 3 1/2 Tbsp. brown sugar
  • 1/2 tsp. vanilla
  • 1/2 Tbsp. ground flaxseed + 2 Tbsp. water
  • 1/4 cup + 2 Tbsp. gf flour
  • 1/16 tsp. baking soda
  • Pinch of salt
  • 3 Tbsp. chocolate chips

Notes

  1. Mix ground flaxseed with water and let sit 5 minutes until gelled.
  2. In a small bowl, mix oil, shortening, and brown sugar until smooth and slightly fluffy.
  3. Stir in vanilla extract and flax egg until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually stir the wet ingredients into the dry ingredients until combined.
  6. Fold in chocolate chips.
  7. Place dough on a lined baking sheet. Leave some space for spreading.
  8. Bake at 350°F for 7-8 minutes, or until centers are soft but no longer shiny.
  9. Let cookies rest on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
