A satisfying way to eat fruit.

Ingredients

Crumble

  • 1/3 cup white rice flour
  • 1/4 cup sorghum flour
  • 1/4 cup millet flour
  • 1/4 cup brown sugar
  • 3 Tbsp. tapioca starch
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 2 1/2 Tbsp. shortening
  • 2 Tbsp. oil

Filling

  • 4-5 cups fruit
  • 1 Tbsp. sugar
  • 1 Tbsp. lemon juice
  • 1-1 1/2 Tbsp. tapioca starch
  • 1/2 tsp. vanilla
  • 1/4 tsp. cinnamon or nutmeg (optional)
  • Pinch of salt

Instructions

  1. Mix flours, brown sugar, tapioca starch, baking powder, and salt in a bowl.
  2. Cut in shortening until mixture is crumbly.
  3. Drizzle in oil and press together until small clumps form.
  4. Chill in fridge for 10-15 minutes (optional).
  5. In the meantime, combine fruit filling ingredients in an 8x8 inch baking dish.
  6. Sprinkle crumble evenly over fruit.
  7. Bake at 350°F for 40-45 minutes or until crumble is golden and fruit is bubbling.
  8. Cool at least 10 minutes before serving.
