Ingredients
Meat
- 2 1/2 lbs. rump roast
- 2-3 Tbsp. gf flour
- 1 Tbsp. oil
- Paprika
- Onion powder
- Pepper
- Salt
Stew
- 2 14 oz. cans petite diced tomatoes
- 1 4 oz. can diced green chilies
- 1 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. cumin
- 1/4 tsp. pepper
Instructions
- Cut the beef roast into 1/2-inch cubes. Pat dry.
- Mix the flour and meat spices together in a bowl.
- Toss the meat with the flour and spice mixture until fully coated.
- Add oil to a skillet on medium-high (6) heat. Brown the beef on all sides, in batches if needed, then add to crockpot.
- Add meat and stew ingredients to the crockpot and stir. Cook on high for 3 hours.
