My favorite way to make spaghetti sauce.

  • 1 Tbsp. oil
  • 1 medium onion
  • 3 cloves of garlic
  • 1-2 chipotles in adobo sauce (optional)
  • 1 3/4 cup broth
  • 2 Tbsp. red wine vinegar
  • 1-28 oz. can crushed tomatoes
  • 2 tsp. honey
  • 2 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 bay leaves
  • 6 oz. tomato paste

  1. Add onion, garlic, and chipotle peppers to a food processor. Pulse until finely chopped.
  2. Set instant pot to sauté on high. Once preheated, add oil and onion mixture. Sauté until soft, ~5 minutes.
  3. Add broth and red wine vinegar and stir. Add tomatoes, honey, and seasonings. Gently stir but do not fully incorporate.
  4. Dollop tomato paste on top and do not stir.
  5. Pressure cook on high for 25 minutes, then natural release for 15-20 minutes. Remove bay leaves.

Substitute 1/4 cup of broth with vodka for vodka sauce.

To thicken sauce, turn sauté on low for 7-10 minutes or until desired thickness is reached.
