Raspberry cake filling

A fresh, tasty jam filling for a birthday cake.


  • 3 pints raspberries
  • 1 1/2 tsp. lemon juice
  • 1 1/2 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 3/4 tsp. vanilla
  • Water, as needed


  1. Add rinsed raspberries, lemon juice, and sugar to a pot. Cook over medium-low (4) until thick. Smash with a fork and turn down the heat, as needed.
  2. Remove from heat. Press through a strainer to remove seeds. Add back to pot and stir in vanilla and cornstarch slurry. 
  3. Simmer until thick.
