Flatbread (milk, wheat)

Yield: 8 small flatbreads

A delicious, chewy side to a variety of dishes.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 packet active dry yeast
  • 1 tsp. salt
  • 1/3 cup milk, warm
  • 1/3 cup water, warm
  • 2 Tbsp. oil
  • 1/3 cup molk/3 cup molk

Instructions

  1. In the bowl of a stand mixer, stir together flour, yeast, and salt.
  2. Add in milk and water and stir to combine. Add in oil.
  3. Knead using the dough hook until dough comes together, ~3-5 minutes.
  4. Cover dough and allow to rise until doubled, ~2 hours.
  5. Once risen, turn dough out onto a floured counter top.
  6. Separate dough into 8 pieces. Heat a clean cast iron skillet over medium (5) heat.
  7. Flatten each piece of dough and lightly oil skillet.
  8. Place each piece on skillet and cook for 20-30 seconds until charred but not burnt.
  9. Flip to other side for 5-10 more seconds then remove.
  10. Repeat with remaining dough.
