Ice box cookies

An easy way to always have cookies on hand.

Ingredients

Wet ingredients

  • 2 Tbsp. vegetable shortening
  • 2 tsp. white sugar
  • 1 1/2 Tbsp. agave
  • 1 Tbsp. applesauce
  • 1/4 tsp. vanilla

Dry ingredients

  • 1/2 cup gf flour
  • 1/2 Tbsp. tapioca starch
  • 1/8 tsp. baking soda
  • Pinch of salt
  • 2 Tbsp. mix-ins (optional)

Instructions

  1. Cream the shortening and sugar until smooth.
  2. Mix in the agave, applesauce and vanilla.
  3. Add the dry ingredients to the wet ingredients and mix until just combined.
  4. Gently fold in mix-ins until evenly distributed.
  5. Shape the dough into a log about 1 1/2 inches in diameter.
  6. Wrap the log tightly in parchment or plastic wrap and chill in the fridge for at least 1 hour until firm.
  7. Once ready to bake, slice log into 1/4 inch thick cookies and place on a lined baking sheet.
  8. Bake at 350°F for 9-10 minutes, until edges are set.
  9. Cool on the pan for a few minutes before transferring to a rack.
