A delicious gluten free version of a classic dessert.

Ingredients

  • 3 Tbsp. chocolate chips

Wet ingredients

  • 1/4 cup + 2 Tbsp. water
  • 1/4 cup + 2 Tbsp. oil
  • 1 1/3 cup powdered sugar
  • 3 Tbsp. brown sugar
  • 1 tsp. espresso powder
  • 1/4 tsp. salt

Dry ingredients

  • 1/3 cup cocoa powder
  • 3/4 cup gf flour

Instructions

  1. In a mixing bowl, stir cornstarch into milk until fully dissolved.
  2. Add remaining wet ingredients and whisk until fully combined.
  3. Whisk in cocoa powder until no lumps remain, then fold in flour.
  4. Pour batter into a greased 8” x 8” pan. Sprinkle chocolate chips on top and gently press them into the batter.
  5. Spread batter evenly over the top, making sure to cover the chocolate chips.
  6. Bake at 350°F for 24 minutes.

Notes

For blondies: sub gf flour for cocoa powder, no espresso powder, add 1 tsp. vanilla

Half batch

Halve ingredients.
Use a lined 8×4 inch loaf pan.
Bake for 20 minutes.
