Small sugar cookies (dairy, almond)

Small sugar cookies (dairy, almond)

A simple gluten free cookie.

Ingredients

  • 1/4 cup oil
  • 1/3 cup granulated sugar
  • 2 Tbsp. powdered sugar
  • 1 1/2 tsp. vanilla
  • 1/8 tsp. almond extract
  • 2 Tbsp. milk
  • 1 1/4 cups gf flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1/3 cup granulated sugar, for rolling

Instructions

  1. Mix wet and dry ingredients together separately. Stir dry ingredients into wet until a soft dough forms. Let dough rest for 10-15 minutes.
  2. Separate dough into 2 teaspoon portions. 
  3. Roll each portion into a ball and coat in granulated sugar. 
  4. Place on a baking sheet and press flat with one press of a fork. 
  5. Bake at 350°F for 9–12 minutes until edges are set and have a tiny bit of color.
  6. Remove from oven and sprinkle tops with more granulated sugar.
  7. Allow to cool for 5 minutes on the baking sheet, then transfer to a wire rack to finish cooling. 
  8. Allow to fully cool before serving.
