A simple gluten free cookie.
Ingredients
- 1/4 cup oil
- 1/3 cup granulated sugar
- 2 Tbsp. powdered sugar
- 1 1/2 tsp. vanilla
- 1/8 tsp. almond extract
- 2 Tbsp. milk
- 1 1/4 cups gf flour
- 1/2 tsp. baking soda
- 1/2 tsp. cream of tartar
- 1/4 tsp. salt
- 1/3 cup granulated sugar, for rolling
Instructions
- Mix wet and dry ingredients together separately. Stir dry ingredients into wet until a soft dough forms. Let dough rest for 10-15 minutes.
- Separate dough into 2 teaspoon portions.
- Roll each portion into a ball and coat in granulated sugar.
- Place on a baking sheet and press flat with one press of a fork.
- Bake at 350°F for 9–12 minutes until edges are set and have a tiny bit of color.
- Remove from oven and sprinkle tops with more granulated sugar.
- Allow to cool for 5 minutes on the baking sheet, then transfer to a wire rack to finish cooling.
- Allow to fully cool before serving.
