Chocolate steamed muffins

A delicious chocolate muffin that is great for all ages.

Ingredients

Dry ingredients

  • 1/4 cup + 2 Tbsp. white rice flour
  • 3 Tbsp. sorghum flour
  • 3 Tbsp. tapioca starch
  • 3 Tbsp. unsweetened cocoa powder
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt

Wet ingredients

  • 1/2 cup + 1 Tbsp. water
  • 1/4 cup brown sugar
  • 3 1/2 Tbsp. oil
  • 1 tsp. vanilla extract

Instructions

  1. Combine wet and dry ingredients separately, then fold wet into dry.
  2. Pour the wet mixture into the dry ingredients and stir until just combined into a smooth, thick batter. Fill each mold about 3/4 full.
  3. Cover the pot, and steam for 20-22 minutes until a toothpick comes out clean.
  4. Remove from the steamer and let cool for 10 minutes before unmolding and serving.

Banana steamed muffins

Total Time: 27 minutes

A cross between muffin and banana bread.

Ingredients

Dry ingredients

  • 1/2 cup white rice flour
  • 3 Tbsp. sorghum flour
  • 3 Tbsp. tapioca starch
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt

Wet ingredients

  • 1/2 cup mashed ripe banana (~1 medium banana)
  • 3-4 Tbsp. brown sugar
  • 3 1/2 Tbsp. oil
  • 1 tsp. vanilla
  • 1-2 Tbsp. water (if needed)

Instructions

  1. Cut banana into pieces. 
  2. Add to a food processor along with remaining wet ingredients.
  3. Blend until smooth.
  4. Combine dry ingredients separately, then fold wet into dry.
  5. Pour the wet mixture into the dry ingredients and stir until just combined into a smooth, thick batter. Fill each mold about 3/4 full.
  6. Cover the pot and steam for 20-22 minutes until a toothpick inserted comes out clean.
  7. Remove from the steamer and let cool for 10 minutes before unmolding and serving.

Other flavor ideas

Mango

Use 1/2 cup mango puree instead of banana
1 Tbsp. lime juice (optional)

Cherry

Use 1/2 cup cherry puree instead of banana 
Use liquid from can if needed to thin batter
