A delicious chocolate muffin that is great for all ages.
Ingredients
Dry ingredients
- 1/4 cup + 2 Tbsp. white rice flour
- 3 Tbsp. sorghum flour
- 3 Tbsp. tapioca starch
- 3 Tbsp. unsweetened cocoa powder
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
Wet ingredients
- 1/2 cup + 1 Tbsp. water
- 1/4 cup brown sugar
- 3 1/2 Tbsp. oil
- 1 tsp. vanilla extract
Instructions
- Combine wet and dry ingredients separately, then fold wet into dry.
- Pour the wet mixture into the dry ingredients and stir until just combined into a smooth, thick batter. Fill each mold about 3/4 full.
- Cover the pot, and steam for 20-22 minutes until a toothpick comes out clean.
- Remove from the steamer and let cool for 10 minutes before unmolding and serving.
Banana steamed muffins

A cross between muffin and banana bread.
Ingredients
Dry ingredients
- 1/2 cup white rice flour
- 3 Tbsp. sorghum flour
- 3 Tbsp. tapioca starch
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
Wet ingredients
- 1/2 cup mashed ripe banana (~1 medium banana)
- 3-4 Tbsp. brown sugar
- 3 1/2 Tbsp. oil
- 1 tsp. vanilla
- 1-2 Tbsp. water (if needed)
Instructions
- Cut banana into pieces.
- Add to a food processor along with remaining wet ingredients.
- Blend until smooth.
- Combine dry ingredients separately, then fold wet into dry.
- Pour the wet mixture into the dry ingredients and stir until just combined into a smooth, thick batter. Fill each mold about 3/4 full.
- Cover the pot and steam for 20-22 minutes until a toothpick inserted comes out clean.
- Remove from the steamer and let cool for 10 minutes before unmolding and serving.
Other flavor ideas
Mango
Use 1/2 cup mango puree instead of banana
