A flavorful meat perfect for tacos.

Ingredients

Meat

  • 2 1/2 lbs. rump roast
  • 2-3 Tbsp. gf flour
  • 1 Tbsp. oil
  • Paprika
  • Onion powder
  • Pepper
  • Salt

Stew

  • 2 14 oz. cans petite diced tomatoes
  • 1 4 oz. can diced green chilies
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. cumin
  • 1/4 tsp. pepper

Instructions

  1. Cut the beef roast into 1/2-inch cubes. Pat dry.
  2. Mix the flour and meat spices together in a bowl.
  3. Toss the meat with the flour and spice mixture until fully coated.
  4. Add oil to a skillet on medium-high (6) heat. Brown the beef on all sides, in batches if needed, then add to crockpot.
  5. Add meat and stew ingredients to the crockpot and stir. Cook on high for 3 hours.
