An easy way to always have cookies on hand.
Ingredients
Wet ingredients
- 2 Tbsp. vegetable shortening
- 2 tsp. white sugar
- 1 1/2 Tbsp. agave
- 1 Tbsp. applesauce
- 1/4 tsp. vanilla
Dry ingredients
- 1/2 cup gf flour
- 1/2 Tbsp. tapioca starch
- 1/8 tsp. baking soda
- Pinch of salt
- 2 Tbsp. mix-ins (optional)
Instructions
- Cream the shortening and sugar until smooth.
- Mix in the agave, applesauce and vanilla.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in mix-ins until evenly distributed.
- Shape the dough into a log about 1 1/2 inches in diameter.
- Wrap the log tightly in parchment or plastic wrap and chill in the fridge for at least 1 hour until firm.
- Once ready to bake, slice log into 1/4 inch thick cookies and place on a lined baking sheet.
- Bake at 350°F for 9-10 minutes, until edges are set.
- Cool on the pan for a few minutes before transferring to a rack.
