
Tuna fritters

A great way to use leftover mashed potatoes.
Ingredients
- 1/2-3/4 cup mashed potatoes
- 1 5 oz. can tuna, drained
- 2 Tbsp. cornmeal
- 1 Tbsp. flour or cornstarch
- 2 Tbsp. finely chopped onion or green onion
- 1/2 tsp. garlic powder
- Salt and pepper, to taste
- 1 tsp. lemon juice
- Oil for frying
Instructions
- Mix all ingredients until thick and sticky.
- If mixture is too soft, add more cornmeal or flour; if too dry, add a small amount of water.
- Shape mixture into small patties about 2–3 inches wide.
- Heat oil in a nonstick skillet over medium heat. Lightly coat each patty in extra cornmeal.
- Pan-fry fritters 3-4 minutes per side until golden brown and firm.
- Drain on paper towels.
