Tuna fritters

A great way to use leftover mashed potatoes.

Ingredients

  • 1/2-3/4 cup mashed potatoes
  • 1 5 oz. can tuna, drained
  • 2 Tbsp. cornmeal
  • 1 Tbsp. flour or cornstarch
  • 2 Tbsp. finely chopped onion or green onion
  • 1/2 tsp. garlic powder
  • Salt and pepper, to taste
  • 1 tsp. lemon juice
  • Oil for frying

Instructions

  1. Mix all ingredients until thick and sticky.
  2. If mixture is too soft, add more cornmeal or flour; if too dry, add a small amount of water.
  3. Shape mixture into small patties about 2–3 inches wide.
  4. Heat oil in a nonstick skillet over medium heat. Lightly coat each patty in extra cornmeal.
  5. Pan-fry fritters 3-4 minutes per side until golden brown and firm.
  6. Drain on paper towels.
