My go-to recipe for fresh, homemade pico de galo salsa.


  • 4 off-the-vine or roma tomatoes
  • 1/2 medium onion
  • 1 clove of garlic or 1/4 tsp. garlic powder
  • 1 medium jalapeño
  • 7-10 springs of cilantro
  • juice of 1 lime
  • 1/2 tsp. salt, to taste
  • 1/2 mango (optional)


  1. Dice tomatoes, onion, and mango, if using. Finely mince the garlic.
  2. Cut off the green top and stem. Quarter the jalapeño lengthwise to remove the seeds and finely mince.
  3. Remove cilantro leaves from stalks. Rinse leaves well, pat dry, then finely chop.
  4. Mix everything in a bowl, adding lime juice and salt. Adjust to taste.


Add more or less lime juice, depending on how liquidy you want it.
