Oven baked fingerling potatoes

A simple way to get crispy yet tender potatoes.


  • 1 1/2 lb. fingerling potatoes
  • 2 Tbsp. oil
  • 1/2 tsp. salt
  • 1/2 tsp. cilantro
  • 1/4 tsp. pepper
  • 1/8 tsp. cumin


  1. Wash and dry potatoes. Cut large potatoes into 1/4ths, medium potatoes in 1/2, and leave small potatoes whole.
  2. Coat potatoes evenly with remaining ingredients. Bake at 400° F for 35 minutes.
