A flavorful rice that comes together quickly.
Ingredients
Chicken
- 6 boneless skinless chicken thighs
- 1/2 tsp. salt
- 1/2 tsp. cumin
- 1/2 tsp. smoked paprika
- 1/2 tsp. onion powder
Rice
- 2 tsp. oil
- 2 tsp. cumin
- 2 tsp. smoked paprika
- 1 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. coriander
- 1/4 tsp. curry powder
- 2 1/2 cups rice
- 2 1/2 cups chicken broth
Notes
- Sprinkle chicken with seasonings on both sides.
- Heat cast iron over medium-high (6-7). Cook chicken until browned on both sides. Set aside.
- Turn on instant pot to sauté over high heat. Once hot, add the rice ingredients besides broth. Sauté for 3-4 minutes until fragrant.
- Add broth to instant pot and stir well.
- Gently place chicken on top and submerge in liquid as much as possible without stirring.
- Cook on rice function.
