A flavorful rice that comes together quickly.

Ingredients

Chicken

  • 6 boneless skinless chicken thighs
  • 1/2 tsp. salt
  • 1/2 tsp. cumin
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. onion powder

Rice

  • 2 tsp. oil
  • 2 tsp. cumin
  • 2 tsp. smoked paprika
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. coriander
  • 1/4 tsp. curry powder
  • 2 1/2 cups rice
  • 2 1/2 cups chicken broth

Notes

  1. Sprinkle chicken with seasonings on both sides.
  2. Heat cast iron over medium-high (6-7). Cook chicken until browned on both sides. Set aside.
  3. Turn on instant pot to sauté over high heat. Once hot, add the rice ingredients besides broth. Sauté for 3-4 minutes until fragrant.
  4. Add broth to instant pot and stir well.
  5. Gently place chicken on top and submerge in liquid as much as possible without stirring.
  6. Cook on rice function.
