
Cajun rice

A simple rice dish with familiar Cajun flavors.
Ingredients
- 1 Tbsp. oil
- 10 oz. andouille sausage
- 4 chicken thighs
- 1/2 onion
- 1/2 green bell pepper
- 2 1/4 cups rice
- 1 14 oz. can diced tomato
- 1 3/4 cups chicken broth
Spices
- 1 tsp. paprika
- 1 tsp. thyme
- 1/2 tsp. smoked paprika
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/8 tsp. cumin
- 1/8 tsp. basil
- 1 bay leaf
Instructions
- Cut sausage into slivers. Cut chicken into bite-sized pieces.
- Finely chop onion and bell pepper. Set aside.
- Heat instant pot to sauté on high. Brown sausage pieces and remove from skillet. Lightly brown chicken. Set aside.
- Add in oil and sauté chopped vegetables until soft, ~6 minutes.
- Add in sausage, chicken, and remaining ingredients and stir to combine.
- Cook on rice function.
