A simple rice dish with familiar Cajun flavors.

Ingredients

  • 1 Tbsp. oil
  • 10 oz. andouille sausage
  • 4 chicken thighs
  • 1/2 onion
  • 1/2 green bell pepper
  • 2 1/4 cups rice
  • 1 14 oz. can diced tomato
  • 1 3/4 cups chicken broth

Spices

  • 1 tsp. paprika
  • 1 tsp. thyme
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/8 tsp. cumin
  • 1/8 tsp. basil
  • 1 bay leaf

Instructions

  1. Cut sausage into slivers. Cut chicken into bite-sized pieces.
  2. Finely chop onion and bell pepper. Set aside.
  3. Heat instant pot to sauté on high. Brown sausage pieces and remove from skillet. Lightly brown chicken. Set aside.
  4. Add in oil and sauté chopped vegetables until soft, ~6 minutes.
  5. Add in sausage, chicken, and remaining ingredients and stir to combine.
  6. Cook on rice function.
