Cajun pasta

A creamy and spice-filled dish that is filing and delicious.


  • 1/2 box (8 oz.) penne pasta
  • 1.25 lbs. chicken breast
  • 10 oz. andouille sausage
  • 1/2 onion, diced large
  • 1/2 red bell pepper, diced large
  • 1 1/2 cup soy milk
  • 1/4 cup diced tomato, juices drained
  • 2 cloves garlic
  • 1 Tbsp. flour
  • 1/4 tsp. each: paprika, thyme, garlic powder, onion powder, pepper
  • Salt, to taste


  1. Cook pasta to al denté and drain. Set aside.
  2. Cook chicken breasts and cut into bite-sized pieces. Set aside.
  3. Cut sausage on the bias and brown. Set aside.
  4. Cut onion and bell pepper. Sauté until slightly tender. Set aside.
  5. Whisk flour into a few tablespoons of soy milk until no lumps remain. Add to a large pot, along with remaining soy milk, diced tomato, garlic, and spices. Simmer for a few minutes until thickened.
  6. Add cooked pasta, chicken, sausage, and vegetables to sauce. Stir well and simmer until heated through.


Diced tomato can be substituted with one medium tomato cut into pieces and watery parts removed.
