A homemade version of a mall classic.



  • 1 1/2 lbs. boneless skinless chicken thighs
  • 1 Tbsp. soy sauce


  • 1/4 cup bourbon
  • 1/4 cup soy sauce and/or coconut aminos
  • 3 Tbsp. rice wine vinegar
  • 2 Tbsp. water
  • 1 tsp. sesame oil
  • 1 Tbsp. tomato paste or ketchup
  • 3 cloves of garlic, minced
  • 1” ginger, peeled and grated
  • 1/4 tsp. garlic powder
  • 1 Tbsp. brown sugar, or as needed


  1. Add soy sauce and chicken thighs to a bowl. Stir until fully coated.
  2. Cook chicken thighs over medium-high (6) heat until browned on both sides and fully cooked through. Remove from heat and allow to rest for 5 minutes, then chop into bite-sized pieces.
  3. In the meantime, add all sauce ingredients to a saucepan over medium (4) heat. Whisk until smooth.
  4. Simmer sauce for 5-10 minutes until thickened, then add chicken pieces. Cook until heated through.
