Apple cider braised beef

Yield: 4 servings

A hearty and flavorful way to cook a chuck roast.


  • 1 1/2 lbs. chuck beef roast
  • 2/3 cup apple cider, divided
  • 1/2 c. water
  • 1/4 c. apple cider vinegar, divided
  • 1 1/2 tsp. salt, divided
  • 1/4 cup flour
  • 1/2 tsp. pepper
  • 2 c. butternut squash
  • 2 small onions
  • 2 cloves of garlic
  • 1 tsp. thyme
  • 1/2 tsp. rosemary
  • 1/2 tsp. garlic powder


  1. Cut beef roast into 3-4” pieces. Peel squash and cut into 3/4” pieces.
  2. Mix 1/2 tsp. salt, 1/2 tsp. pepper, and flour in a bowl. Coat beef pieces in flour mixture on all sides.
  3. Heat a skillet over medium-high (6). Brown beef pieces on all sides. Set aside. 
  4. Add onion and 1 Tbsp. oil to skillet. Sauté for ~5 minutes until soft. Add in garlic and stir for another minute.
  5. Add 1/3 c. of apple cider and continue to cook until caramelized, ~10 minutes. 
  6. Remove from skillet and pour onions into a 9”x13” baking dish. Add beef pieces, then scatter squash on top. 
  7. Combine 1/3 cup of apple cider, water, 2 Tbsp. of apple cider vinegar, and spices in a bowl. Pour over everything.
  8. Cover with aluminum foil and bake at 300°F for 2 hours. Remove foil, add 2 Tbsp. of apple cider vinegar and adjust to taste, then bake for another 30 minutes.
