A great birthday cake to go with countless frostings and fillings.

Ingredients

  • 3 eggs
  • 1/3 cup + 2 1/2 Tbsp. (108.8ml) vegetable oil
  • 1/4 cup (3 oz.) sprinkles

Dry ingredients

  • 1 3/4 cups + 2 Tbsp. (234.6g) all-purpose flour
  • Scant 2 tsp. baking powder
  • 3/8 tsp. salt

Wet ingredients

  • 1 cup + 2 Tbsp. (210g) white sugar
  • 3/4 cup (183.6g) milk
  • 1 1/2 tsp. white vinegar
  • 1 1/2 tsp. amaretto

Instructions

  1. In three separate bowls, mix dry ingredients, wet ingredients, and beat egg. 
  2. Stir oil into dry ingredients until fully combined and the texture of wet sand.
  3. Whisk in wet ingredients until smooth.
  4. Whisk in egg until smooth, ~20-30 seconds by hand or 10 seconds in a stand mixer.
  5. Gently fold in sprinkles, stirring for no more than 10 seconds to avoid color bleeding.
  6. Grease the bottom of an 8” x 8” pan and pour in batter.
  7. Bake at 350°F for 32 minutes. 
  8. Allow to cool for 10 minutes, then release cake from pan. Allow to cool in the pan at room temperature, then store in fridge.

Notes

For a 9” x 13” cake, multiply recipe by 1.5.
