Strawberry buttercream

A buttery strawberry frosting perfect for birthday cake.


  • 1 1/2 sticks (3/4 cup/170g) unsalted butter
  • 2 cups (250g) powdered sugar
  • 2 Tbsp. (20g) freeze dried strawberries
  • 2 Tbsp. (32.5g) milk
  • 1 Tbsp. strawberry jam/purée
  • 1/2 tsp. amaretto


  1. Cut butter into cubes. Add to a stand mixer, then cream with whisk attachment until fluffy.
  2. Add in powdered sugar. Stir on low until powdered sugar is fully incorporated.
  3. Add freeze dried strawberries and jam and stir until smooth.
  4. Add milk and vanilla and stir until smooth.
  5. Turn mixer on medium speed and beat mixture for 5-7 minutes until light and fluffy.


This recipe makes enough to cover a 9” x 13” cake or similar size. To add frosting in the middle of the cake, double the recipe.
