A chewy, soft classic cookie.

Ingredients

Wet ingredients

  • 1 1/2 Tbsp. (20g) coconut oil
  • 2 Tbsp. (25g) granulated sugar
  • 1 Tbsp. + 1 tsp. (16.8g) brown sugar
  • 1 1/2 tsp. (8.3g) yogurt
  • ~1/3 (18.8g) egg
  • 1/4 tsp. vanilla extract

Dry ingredients

  • 1/4 cup + 2 Tbsp. (47g) all-purpose flour
  • 1/4 tsp. cream of tartar
  • 1/16 tsp. baking soda
  • 1/8 tsp. salt

Coating

  • 1 Tbsp. sugar
  • 3/4 tsp. cinnamon

Instructions

  1. Cream oil, sugars, and yogurt until light and fluffy, ~3 minutes. 
  2. Stir in egg and vanilla.
  3. Combine dry ingredients and mix until just combined. Optional: chill dough while oven preheats.
  4. Separate dough into 4 balls then roll in cinnamon sugar. 
  5. Bake at 350°F for 8-9 minutes, until cookies have set on top and are starting to wrinkle but have not gained any color. Remove from oven and allow to cool on baking sheet.
