Peanut butter cookies

These are far from the classic peanut butter cookies that I grew up eating that had the fork imprints on top. I’m not really a huge peanut butter cookie fan to begin with, but I do really like those for what they are. This recipe is more like a grown up peanut butter-flavored sugar cookie. Although untraditional, it is quite tasty. The peanut butter flavor is subtle, there is a nice chewy middle and crispy edges, and it’s a cookie that I surprisingly found myself coming back to for more.

These easy-to-make cookies are crispy on the edges and chewy in the middle with a delicious caramel undertone.

Ingredients

  • 2 1/2 Tbsp. (33.5g) coconut oil
  • 1/4 cup (64g) creamy peanut butter
  • 1/4 cup + 2 1/2 Tbsp. (77g) brown sugar
  • 1 Tbsp. (20ml) milk
  • 1/2 tsp. vanilla
  • 1/3 (16.6g) egg
  • 1/4 cup+ 1 Tbsp. (39g) all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda

Instructions

  1. Beat all wet ingredients besides egg until smooth. 
  2. Add in egg and beat for 15 seconds until emulsified.
  3. Stir in dry ingredients. Chill dough and preheat oven 350°F.
  4. Once oven is preheated, scoop chilled dough with a cookie scoop. Sprinkle sugar on top of each cookie then lightly press flat on top.
  5. Bake for 8-9 minutes until edges are set and golden.

Notes

For chewier cookies, bake at 375°F for 7 minutes.
