Peach cobbler (gf/vegan)

A great vegan and gluten-free version of a timeless dessert.
Ingredients
Peaches
- 1 lb. peaches
- 1/4 cup water
- 2 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1/2 Tbsp. lemon juice
Topping
- 1/2 cup gf flour
- 1/4 cup sugar
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup milk
- 1 1/2 Tbsp. oil
Sprinkling
- 1 Tbsp. sugar
- 1/8 tsp. cinnamon
- 1/8 tsp. nutmeg
Instructions
Peaches
- Add peaches ingredients to a pot. Bring to a boil over medium (4) heat, stirring often.
- Once simmering, remove from heat and pour into an 8” x 8” pan.
Topping
- In a bowl, whisk together flour, sugar, baking soda, and salt. Add in milk and oil and mix until just combined.
- Spoon mixture evenly over the peaches.
Sprinkling
- Mix sprinkling ingredients. Sprinkle evenly over batter.
Bake
- Bake at 350°F for 21 minutes, until top is golden and fruit is bubbling.
- Remove from oven and allow to cool for 10 minutes before serving.
