A great vegan and gluten-free version of a timeless dessert.

Ingredients

Peaches

  • 1 lb. peaches
  • 1/4 cup water
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cornstarch
  • 1/2 Tbsp. lemon juice

Topping

  • 1/2 cup gf flour
  • 1/4 cup sugar
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 cup milk
  • 1 1/2 Tbsp. oil

Sprinkling

  • 1 Tbsp. sugar
  • 1/8 tsp. cinnamon
  • 1/8 tsp. nutmeg

Instructions

Peaches

  1. Add peaches ingredients to a pot. Bring to a boil over medium (4) heat, stirring often. 
  2. Once simmering, remove from heat and pour into an 8” x 8” pan.

Topping

  1. In a bowl, whisk together flour, sugar, baking soda, and salt. Add in milk and oil and mix until just combined.
  2. Spoon mixture evenly over the peaches.

Sprinkling

  1. Mix sprinkling ingredients. Sprinkle evenly over batter.

Bake

  1. Bake at 350°F for 21 minutes, until top is golden and fruit is bubbling.
  2. Remove from oven and allow to cool for 10 minutes before serving.
