Sweet potatoes

Yield: 6 servings

A classic staple at any holiday meal.


  • 4 medium/large sweet potatoes
  • 5 Tbsp. butter
  • 2 Tbsp. brown sugar
  • 2 tsp. white sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 tsp. vanilla


  1. Peel potatoes. Cut into 3/8" rounds, then cut those in half.
  2. Add potatoes to a large pot, then stir in remaining ingredients. Cover and turn heat to low (2) for 10-15 minutes.
  3. Once sugar is melted and potatoes are starting to release their juices, turn heat up to medium (6) and bring to a simmer.
  4. Once simmering, reduce heat to medium-low (3). Stir every ~5 minutes until potatoes are fork tender and soft but not mushy and falling apart.
