
Sorghum flour blender crepes

A refreshing breakfast alternative to traditional wheat pancakes.
Ingredients
- 1/2 c. + 2 Tbsp. sorghum flour
- 1/3 c. milk
- 1/2 Tbsp. agave
- 1/2 Tbsp. oil
- 1 egg
- 1 tsp. vanilla extract
- dash of nutmeg
- pinch of salt
Instructions
- Add all ingredients to blender. Blend on high for 30 seconds until well combined and airy.
- Heat skillet over medium (4-5). Grease well with 1-2 tsp. of oil.
- Add a scant 1/4 c. of batter at a time, swirling in the pan. Let cook 20-40 seconds per side, flipping once top side is mostly cooked.
- Re-grease pan in between crepes, as needed, and repeat until batter is finished.
