Sorghum flour blender crepes

A refreshing breakfast alternative to traditional wheat pancakes.

Ingredients

  • 1/2 c. + 2 Tbsp. sorghum flour
  • 1/3 c. milk
  • 1/2 Tbsp. agave
  • 1/2 Tbsp. oil
  • 1 egg
  • 1 tsp. vanilla extract
  • dash of nutmeg
  • pinch of salt

Instructions

  1. Add all ingredients to blender. Blend on high for 30 seconds until well combined and airy.
  2. Heat skillet over medium (4-5). Grease well with 1-2 tsp. of oil.
  3. Add a scant 1/4 c. of batter at a time, swirling in the pan. Let cook 20-40 seconds per side, flipping once top side is mostly cooked.
  4. Re-grease pan in between crepes, as needed, and repeat until batter is finished.
