Sorghum cornbread

A gluten-free alternative to regular cornbread.

Ingredients

  • 1/2 c. sorghum flour
  • 1/2 c. cornmeal
  • 2 Tbsp. white rice flour
  • 2 Tbsp. corn flour (optional)
  • 1 Tbsp. flax meal (optional)
  • 1 egg
  • 1 Tbsp. honey
  • 3/4 c. water/milk
  • 1 Tbsp. oil
  • pinch of salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder

Instructions

  1. Mix all ingredients. Allow to chill in egg for 8 hours or overnight.
  2. Bake at 375ºF for 40 minutes.
