
Soaked oatmeal blender muffins

Nutritious and digestible muffins made from oats.
Ingredients
Pre-soak
- 3/4 c. old-fashioned oats
- 2 Tbsp. oat bran
- 1 tsp. apple cider vinegar
After soak
- 1 Tbsp. flax
- 1/2 banana
- 2 deglet dates
- 1/2 medjool date
- 3/4 Tbsp. oil
- 1 1/2 Tbsp. nuts or nut butter
- 1/2 Tbsp. agave
- 1/2 tsp. vanilla extract
- 1/2 tsp. baking powder
- 1/8 tsp. baking soda
Instructions
- Add all pre-soak ingredients to a jar. Cover with cool water and allow to soak 8 hours or overnight.
- Once oats are soaked, drain and rinse well with cool water. In the meantime, soak the dates in hot water.
- Add soaked oats and flax to blender. Pulse until starting to mix.
- Drain dates and add to blender. Add the remaining ingredients besides baking soda and baking powder to blender, as well. Blend until completely smooth.
- Once smooth, add baking powder and baking soda. Pulse until combined.
- Stir in any mix-ins, if using. Divide between 6 muffin tins, and bake at 325F for 50 minutes.
