Soaked oatmeal blender muffins

Nutritious and digestible muffins made from oats.

Ingredients

Pre-soak

  • 3/4 c. old-fashioned oats
  • 2 Tbsp. oat bran
  • 1 tsp. apple cider vinegar

After soak

  • 1 Tbsp. flax
  • 1/2 banana 
  • 2 deglet dates
  • 1/2 medjool date
  • 3/4 Tbsp. oil
  • 1 1/2 Tbsp. nuts or nut butter
  • 1/2 Tbsp. agave
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. baking powder
  • 1/8 tsp. baking soda

Instructions

  1. Add all pre-soak ingredients to a jar. Cover with cool water and allow to soak 8 hours or overnight.
  2. Once oats are soaked, drain and rinse well with cool water. In the meantime, soak the dates in hot water.
  3. Add soaked oats and flax to blender. Pulse until starting to mix.
  4. Drain dates and add to blender. Add the remaining ingredients besides baking soda and baking powder to blender, as well. Blend until completely smooth.
  5. Once smooth, add baking powder and baking soda. Pulse until combined.
  6. Stir in any mix-ins, if using. Divide between 6 muffin tins, and bake at 325F for 50 minutes.
