Small batch yellow cake

Ingredients

Dry ingredients

  • 1 c. + 3 Tbsp. all purpose flour
  • 1 Tbsp. cornstarch
  • 3/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 tsp. salt

Wet ingredients

  • 1/4 c. + 2 Tbsp. sugar
  • 2 1/2 Tbsp. coconut oil, slightly softened
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/3 c. yogurt
  • 2-3 Tbsp. water

Instructions

  1. Preheat oven to 350. Combine dry ingredients and set side.
  2. Whisk sugar and coconut oil together until light and fluffy. Beat in egg and vanilla extract.
  3. Alternate folding in the flour and the yogurt/water, starting with the flour, for a total of 3 additions of the flour mixture.
  4. Gently pour batter into 7" x 4" baking dish. Bake for 30 minutes.
