Ingredients
Dry ingredients
- 1 c. + 3 Tbsp. all purpose flour
- 1 Tbsp. cornstarch
- 3/4 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. salt
Wet ingredients
- 1/4 c. + 2 Tbsp. sugar
- 2 1/2 Tbsp. coconut oil, slightly softened
- 1 egg
- 1 tsp. vanilla extract
- 1/3 c. yogurt
- 2-3 Tbsp. water
Instructions
- Preheat oven to 350. Combine dry ingredients and set side.
- Whisk sugar and coconut oil together until light and fluffy. Beat in egg and vanilla extract.
- Alternate folding in the flour and the yogurt/water, starting with the flour, for a total of 3 additions of the flour mixture.
- Gently pour batter into 7" x 4" baking dish. Bake for 30 minutes.
