Simple African tomato stew

A perfect stew for a variety of African side dishes.


  • 1/4 cup oil
  • 1/2 onion
  • 2 cloves garlic
  • 1 can diced tomatoes
  • 1 Tbsp. tomato paste
  • 1/4” ginger
  • 1 habanero
  • 1/8 tsp. baking soda
  • Salt and pepper, to taste


  1. Dice onion, slice garlic, and grate ginger. Add enough oil to cover the bottom of the pot. Turn heat to medium (4-5).
  2. Once hot, sauté onion and garlic until starting to brown. 
  3. Add in can of tomato, tomato paste, ginger, habanero, and baking soda. Adjust salt and pepper, to taste. 
  4. Allow to simmer for ~20 minutes.
