A hearty dish that is warm and flavorful.
Ingredients
- 1 lb. red lentils
- 1 Tbsp. oil
- 1/2 onion
- 1/2 red bell pepper
- 3 carrots
- 1 medium tomato or 12 cherry tomatoes
- 2 cloves garlic
- Water
Spices
- 1/2 tsp. chili powder
- Heaping 1/4 tsp. cumin
- 1/4 tsp. pepper
- 1/4 tsp. basil
- 1/4 tsp. cilantro
- 1/4 tsp. cayenne
- 2 bay leaves
- Salt, to taste
Instructions
- Soak lentils for 4-8 hours in plenty of water + 1 Tbsp. apple cider vinegar.
- Once lentils have soaked, finely dice onion, red bell pepper, carrots, tomato, and garlic.
- Heat oil over medium (6). Sauté onion, red bell pepper, and carrots until soft, ~4-5 minutes. Add in tomato and continue to cook down for another ~3 minutes. Then, add in garlic for an additional minute.
- Stir in spices and drained lentils. Allow to cook for 1-2 minutes.
- Add water until just even with lentil mixture. Simmer, slightly covered, until lentils are fully cooked, ~20 minutes.
