Soak lentils for 4-8 hours in plenty of water + 1 Tbsp. apple cider vinegar.
Once lentils have soaked, finely dice onion, red bell pepper, carrots, tomato, and garlic.
Heat oil over medium (6). Sauté onion, red bell pepper, and carrots until soft, ~4-5 minutes. Add in tomato and continue to cook down for another ~3 minutes. Then, add in garlic for an additional minute.
Stir in spices and drained lentils. Allow to cook for 1-2 minutes.
Add water until just even with lentil mixture. Simmer, slightly covered, until lentils are fully cooked, ~20 minutes.
