A simple weeknight dinner that is tasty and quick.
Ingredients
- Pesto
- Chicken, fish, or other meat
- Gnocchi
- Roasted cherry tomatoes
Instructions
- Cook meat if not already cooked.
- Roast tomatoes (See note).
- Cook the gnocchi according to package directions.
- Mix pesto with cooked gnocchi. Serve with meat and roasted tomatoes.
Notes
To roast cherry tomatoes, cut in half. Cover in oil, salt, and pepper, and bake at 400ºF for 25 minutes.
