A classic West African dish that is rich and velvety.

Ingredients

  • 3/4 c. peanut butter
  • 2 Tbsp. (1/2 can) tomato paste
  • 1/4 c. tomato sauce
  • 1 medium onion
  • 5 cloves garlic
  • 1 inch ginger
  • 1 habanero
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. of basil, oregano, thyme, or a mix of the three
  • 12 okra (optional)
  • 1 1/2 c. smoked turkey, bite-size

Instructions

  1. In a pot, heat peanut butter, tomato paste, and tomato sauce over medium-low (3-4). Add just enough water to make creamy. Cook until oil rises to top, ~10 minutes, stirring frequently.
  2. In the meantime, add onion, garlic, ginger, habanero, and spices to a different pot. Boil in ~2 cups of water until very soft, then blend.
  3. Once peanut butter is ready, add blended sauce, meat, okra, and enough water to make creamy again, if needed.
  4. Cook down ~30 more minutes over medium-low (3) heat , or until okra is cooked and very oily on top.

Notes

Blended crushed tomatoes can be substituted for tomato sauce
