A classic West African dish that is rich and velvety.
Ingredients
- 3/4 c. peanut butter
- 2 Tbsp. (1/2 can) tomato paste
- 1/4 c. tomato sauce
- 1 medium onion
- 5 cloves garlic
- 1 inch ginger
- 1 habanero
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. of basil, oregano, thyme, or a mix of the three
- 12 okra (optional)
- 1 1/2 c. smoked turkey, bite-size
Instructions
- In a pot, heat peanut butter, tomato paste, and tomato sauce over medium-low (3-4). Add just enough water to make creamy. Cook until oil rises to top, ~10 minutes, stirring frequently.
- In the meantime, add onion, garlic, ginger, habanero, and spices to a different pot. Boil in ~2 cups of water until very soft, then blend.
- Once peanut butter is ready, add blended sauce, meat, okra, and enough water to make creamy again, if needed.
- Cook down ~30 more minutes over medium-low (3) heat , or until okra is cooked and very oily on top.
Notes
Blended crushed tomatoes can be substituted for tomato sauce
