- 15 mint leaves
- 3/4 c. water
- 1/2 c. coconut sugar
- 1 Tbsp. agave
- Add water, sugar and agave to a saucepan. Heat over medium (5) until sugar has dissolved. Remove from heat.
- Wash and dry mint leaves. Crush mint leaves and add to water/sugar mixture. Stir well.
- Once liquid has come to room temperature, remove mint leaves. Store in fridge for up to two weeks.
Other sugar can be substituted, but I like the deep flavor of coconut sugar.
To make a refreshing summer drink, this can be served mixed with seltzer water over ice. 1 can of seltzer + 2 Tbsp. simple syrup
