A delicious rice dish with Creole flavors.

Ingredients

  • 1/2 onion
  • 1 bell pepper (red or green or 1/2 of each)
  • 2 stalks of celery
  • 3 cloves of garlic
  • 1 1/2 cups rice
  • 2 large tomatoes or 1 can diced tomatoes
  • 1 lb. chicken thighs
  • 10 oz. andouille sausage
  • 1 tsp. smoked paprika
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 bay leaves
  • 1 1/2 cups broth
  • 1/2 Tbsp. Worchestester sauce
  • 1 Tbsp. hot sauce

Instructions

  1. Dice onion, bell pepper, and celery. Mince garlic. Slice sausage. Cut chicken into bite-sized pieces. Set all aside.
  2. Brown sausage and chicken. Set aside.
  3. In instant pot, sauté onion, bell pepper, and celery until slightly soft. Add garlic and seasonings and sauté for another minute.
  4. Add remaining ingredients and browned meat to pot and stir.
  5. Cook in instant pot on rice setting for 12 minutes. Release pressure after 5 minutes.
