Fajita vegetables are an easy side dish for a variety of dinners. This recipe is simple and straightforward, using only bell peppers, an onion, and some spices.
- 1 Tbsp. avocado oil
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow or orange bell pepper
- 1/2 onion
- Salt and pepper
- Cut bell peppers and onions into 1/2 slices. Heat skillet to medium-high (7).
- Add oil to hot skillet, along with bell peppers and onions. Season with salt and pepper.
- Cook for ~7 minutes, stirring often. Once cooked, remove from heat and serve.
