Instructions

  1. Coat 9" x 13“ baking dish with ~ 1/3 c. enchilada sauce. Set aside.
  2. Warm tortillas for 20-30 seconds each. Lightly cover inside of tortilla with enchilada sauce (optional), then add filling.
  3. Roll seam-side down in dish, then repeat with each tortilla. Cover each tortilla thoroughly with enchilada sauce.
  4. Cover pan with tin foil, then bake at 350 for 20 minutes. Remove tin foil, then bake another 5 minutes.
